Chocolate Mint Cookies with Chocolate Chips
  • 1 cup butter or margarine, softened
  • 1 1/2 cups sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2/3 cup baking cocoa
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons peppermint extract
  • 1 package chocolate chips/chocolate chunks

  • In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, cocoa, baking soda and salt; gradually add to creamed mixture. Add peppermint and chocolate chips/chunks. Cover and refrigerate for 1 hour or until easy to handle.  Bake at 350 degrees F for 8-10 minutes or until the edges are firm. Remove to wire racks.

Apple Crumble

2c flour

2/3 c brown sugar

1/2c uncooked reg. oats

1/2 tsp salt

3/4c melted butter



4c cubed green apples (about 3 apples)

1/3 c white sugar

1 1/2tsp cornstarch

1/8tsp salt

1/3 c water
1tsp vanilla
1/4c brown sugar
1tbs cinnamon

preheat oven to 350 degrees

combine flour, brown sugar, oats, salt and melted butter in a med. bowl. pack 1 cup of the mixture and set aside. gently press the remainder into a 9" pie plate. Place in oven for appox. 5 minutes

in a sauce pan bring sugar, cornstarch, water, vanilla,and cinnamon to a boil and add apple chunks. stir till well coated and let simmer for 2-3 minutes. pour into the crust and then crumble the reserved oat mixture on top. bake appox 40 minutes
